A friend of mine called me up and asked me to come help her make a raw food cake for her birthday.  I can’t think of a better way to spend a friend’s birthday than to do it playing in the kitchen together.  And besides, it’s a berry time of year.  Strawberries, blueberries, black raspberries.  Berries.

We used a recipe from “Ani Phyo’s Raw Food Essentials.”  But we had to modify it to make it work for us.  Here is the original recipe:

  • 3 cups walnuts
  • 1/4 tsp salt
  • 1 cup Medjool dates
  • 1 Tbsp vanilla extract
  • 2 Tbsp agave

All this is processed one ingredient at a time in the food processor.  We discovered that walnuts are very oily and needed to counteract that so we added enough almond flour to dry it up and give it a better texture.  For the filling we used Ani’s original recipe:

  • 2 cups fruit (Gina chose lemons)
  • 1/2 cup agave

Whizzed up in the blender.  Once again our sauce was too liquid, not like a cake filling at all.  So we added psyllium till the texture was more like a pudding.  One of the cool things about psyllium is that it is great for the digestive tract and is used in the medical industry as fiber for the GI tract.  We added whole raspberries to the sauce and sprinkled the top with shredded coconut.  Super Yum for my beautiful friend on her birthday!

As an add on to this tribute to berries, a friend of our family’s whom we have known for years came by the other day and brought us Black Raspberries (yes, that’s a thing).  She said the birds planted them in her yard.  How cool is that?

Grateful Year in Review: 18 Things Remembered

This has been an amazing and busy year.  I wonder if I’m normal because I take on so much work.  Does everybody do that?

My year in review:

  1. Completed 3 semesters of nursing school with a 4.0 gpa (not sure that matters to anybody but me, but there it is).

  3. Ate lots of veggies out of my own garden (which was a miracle because I had zero time for gardening).
  4. Kept my business going for a whole year while I simultaneously attended nursing school.

    Also didn’t think that was possible.  There are amazing people who work at I.M. Spa, that’s all there is to it.

  13. Watched Craig pour a concrete slab for a Hot Tub that we have not yet found.  Watched Craig do amazing things in personal growth, change his food, and get his blood pressure under control with meditation.  He amazes me.  And he bikes 60 miles round trip to nursing school in Bentonville.
  14. Took my neice (Bella) to the Nutcracker.
  15. Picked blueberries with my family from Texas.
  16. Maintained my gratitude practice with my Gratitude Partner via email.  For that I am eternally grateful 🙂

I am so grateful to be here and can’t even begin to imagine what kinds of things we’ll be getting into this year.  I’m glad to have survived a year of nursing school while being a working mom, and I am constantly amazed at all the opportunities and experiences that we have.

Reduce Your Blood Pressure with Meditation

If you have been following Craig’s (my husband of 25 years) story you know that he was able to get his Low Density Lipoprotein levels from 148 (high) to 117 (almost normal) after 4 months of raw and vegan eating.  But his Blood Pressure remained high.  Often it was 150/90 which is Stage 1 Hypertension.

Don’t be fooled by the “Stage 1” part of Hypertension.  There are only 2 stages.  150/90 is not good. 110/70 to 120/80 is normal.

We weren’t sure where to go with the meditation at first.  I guess the concept of meditation doesn’t feel weird to me.  Just sit and breathe and let your body slip into Alpha state.  But to do it with somebody who wants guidance or a method hadn’t occurred to me.  Also during this time many of my clients have been asking me pointed questions about meditation, how to do it, and where to go for resources.  There are tons of resources for learning how to meditate.  Here in Northwest Arkansas there are classes all over the place.  Classes are a great way to experience many different types of meditation to find one that works for you.

I looked into Transcendental Meditation and the Silva Method of meditation.  They are both expensive but well reviewed and researched methods.  I did not take the TM course, because as a starving nursing student it does not fit into the budget.  But a long time ago a friend of mine gifted me some Silva Method recordings and they are fabulous, especially if you need a step by step method to feel like you are doing it right.

Turns out Craig was okay without a method and it works pretty amazing whether you pay somebody $1000 to learn or not.  You can see his results after just 14 days of meditating once a day for 15 minutes.

He went from 150/90 to 108/70 in 2 weeks.  Yes I know my method for recording is not daily.  But it was finals at Nursing School and I did the best I could.  The numbers speak for themselves.  You just can’t make that up.

One of the questions people always ask me is, “Is he exercising?”  Yes Craig rides his bicycle from Fayetteville to Bentonville and back (60 miles round trip) once or twice a week, and all over Fayetteville recreationally the rest of the week.

Another that I always hear is, “I can’t get my mind to stop so that I can meditate. I never feel like I’m doing it right.”  I always hear that there is no right way and no wrong way to meditate.  That being said there are times when I don’t “get there.”  Usually when that happens it’s because of interruptions.  I get a little irritated but I have to forgive myself.  I think this might be key to people who criticize themselves so much they can’t let go and sink in.  Forgiveness and practice are the key.  Show up to your practice every day.

One of the things that Craig and I have learned about our meditation practice is that it is not a good idea to wake up from a dead sleep and start meditating.  That might have been a no brainer, but at the time it seemed like it might be a more efficient use of our time.  NOT.

We also discovered that we prefer 15 minutes to 10.  Ten minutes is okay, but we just barely sink in and start floating before the timer is going off.

I aspire to meditate 3 times a day for 15 minutes each time.  Morning, noon, and night seems like a good recipe.  I’ll keep you posted about how it is going for Craig.  It’s scary coming into your 40s and staring those numbers in the face.

Nursing School Finals

My butt is numb. My low back hurts. I have been sitting in front of the computer nonstop for days and days and days studying for nursing school finals.  Tomorrow is my last one.

By the time I get done with this degree program I will have zero muscle mass because all I do is sit in my room and study.

Yes, I run to class and to work but that is it.  No other movement.  But after tomorrow I will have three weeks to move about freely!

So far I have an “A” in Clinicals, Older Adult, Foundations, and Pharmacology.  Last test is in Health Assessment.  Sure hope I can pull off another “A.”

In between studying for hours, I take breaks to look at my next projects.  I’m all fired up about writing a couple of books, touring the world’s best institutional food places and figuring out how to do good food institutionally here in Arkansas.  I don’t think that is a nursing job, but hey you never know.  It’s possible that somebody could hire me to be a diplomat and negotiate better food systems that represent health in health care settings.  A girl can dream, right?

The first place I’m going after this exam tomorrow is the chiropractor.  I’m a mess.

Then I’m going to do some Christmas shopping (yes, I know it’s crazy to do Christmas shopping the week before Christmas, but I’ve been a little busy).  Then I’m going to do a massage for a client.  And then I’m going to sit down and prioritize my next three weeks so I can get as much as I can done on my ‘to do’ list.

I’m taking my neice Bella to the Nutcracker Ballet on Sunday, and then my 9 year old son Ben is ‘Joseph’ in our church Christmas Pageant this year.  I love to hear my boys sing.  It’s the best.

Today my back aches, my butt is numb, I’m exhausted, frustrated, and down right ‘tarred.’  A little chiropractic, a few yoga sessions, some fun with my beautiful family, and hopefully I’ll be raring and ready to go for the next semester.

Right now I’m going to bed.  Wish me luck on my test tomorrow.

Lower Cholesterol with Raw Vegan Food

I always knew from other people’s stories, as well as from my textbooks on pathophysiology, that raw and vegan food could lower your cholesterol and decrease your risk of heart disease.  This summer Craig, my husband, was donating plasma when his blood clogged up the machine with lipids (fats).  Too many of them.  So he went to the VA hospital and asked them to analyze his blood.  This is what they found:

The reason I put the LDL Cholesterol in red is because it’s the “bad cholesterol” that is supposed to be less than 100.  It’s bad because it can clog arteries and, according to the Mayo Clinic, “dramatically increases your chance of developing heart disease and having a heart attack.”  They say it is also the “main way you can lower your risk of heart disease.”  Craig’s LDLs were high at 148.

I’ve been eating mostly raw vegan food for over 3 years now, and what propelled me there was my own deadly food allergies.  My family eats mostly  raw vegan too.  They have to.  There is nothing else in the house.  What Craig was eating when he was home was clean burning fuel, but what he was eating when he was out and about was undermining what he was eating at home.

He decided to get serious about what he was putting in his body.  Brutal honesty.  No more pizza on the fly, muffins on campus, creamy coffee,  Thai food sauces with coconut milk, or fast food breakfast sandwiches.  He started packing Green Smoothies, raw cashew dip with veggies, and fruits for lunches and snacks.  He refused to eat anything with meat, cheese, eggs, or oils it in.  We do still cook rice and vegetables, or baked squash, and other vegan dishes at home.  And we haven’t had bread in the house since I went raw three years ago, so it just wasn’t an option.

Take a minute to really look at that graph because it is a really big deal.  His LDLs dropped 31 points in 4 months time.  With raw vegan food.  Nothing more, nothing less.

When the nurse at the VA looked at his numbers she said, “Did the doctor put you on a statin?”

A ‘statin’ medication is a drug that inhibits the production of cholesterol (fats/lipids) in the liver.  They are very effective at getting your lipid levels down if you have high lipid levels like Craig did.  The doctor did not put Craig on a statin.  Craig put himself on a vegan diet.  He got brutally honest about what he was eating and changed it. That’s impressive.

He rides his bike several times a week, and rides it up to Bentonville and back at least once a week (60 miles round trip) whether it’s 15 degrees out or 60.  His blood pressure is still high at 130-140/70, so we’re planning on getting a meditation routine going together, and looking at other strategies as well.  We’ll let you know how it goes.

Craig is still trying to change his food ratio even more.  He wants to get those LDLs down under 100.

One of the things I tell people when they are trying to transition to raw or vegan food and away from bread, meat, and cheese, is to allow yourself to eat lots of nuts, seeds, and avocados to get that full feeling that you are used to.  Once your body adjusts to clean burning fuel you can think about changing your ratios to more veggies and less nuts.  That’s where he is now.

It’s so much fun watching him go through this transition.  Now he says things that I’ve been saying for a while that you can’t relate to unless you have done it.  Things like, “that cooked oil smells gross,” and “I feel so light now when I’m riding/running.  Before I transitioned I felt so heavy.  It’s like I was fighting my body to get it to move.  Now when I exercise I feel like I could fly.”

About a week after Craig found out how great his lipid levels are now he got a phone call from a friend in the hospital who had just suffered a heart attack.  He was 48 years old.  We’re 44.  Our own mortality is staring us in the face.

I have high hopes for Craig’s health.  He’s doing an amazing job at making this change, and I hope that we will continue to see his lipid numbers, and his blood pressure numbers improve.  We’re only a few months into this particular science experiment, but the prognosis is good.

Healing Community

When I was a kid we moved around a ton.  Texas, the Bahamas, San Diego, New Hampshire, Possum Trot, Low Gap, Monterey.  My parents were musicians and the community we had was the community of artists and musicians.  It’s a beautiful thing because there is a whole culture of people who speak the same language, hold the same values, and they dedicate their lives to their art.

It’s been amazing watching my kids grow up in the same house for the past 18 years.  It’s a whole other level of community that I’ve come to know, and man is it beautiful.  We have a supportive spiritual community in our church, a very active and supportive local business community, a musical community, an educational community at the university as well as at the public schools,  a farm community that is feeding us well, and a downtown local community of folks who, you might not know them all one on one, but there are faces that are just part of the fabric that makes this town so beautiful.  I’m sure I’m leaving out a bazillion folks but you get the idea.

We also have a healing community here in Fayetteville that is a remarkable resource.  We have great chiropractors, acupuncturists, naturopaths, physical therapists, vibration therapists, acoustic therapists, art therapists, nurses, doctors, psychologists, hypnotherapists, yoga instructors, physical trainers, midwives, doulas, herbalists, nutritionists (or rather ‘foodies’), and many other specialties.  Hah!  I almost left out one of my favorites, massage therapists.

I’m on a mission to interview as many talented, smart, innovative, out of the box thinking, health practitioners who are amazing at their job as I can.  (Which isn’t very many right now since I’m in nursing school full time).  I love to find out how people got interested in their work, what they love about it, how it changes lives, and how it contributes to our  healing community.

I have quite a list of people I want to talk to, but I’m interested in you.  Who do you love?  Who has helped you with your health?  Who has made you feel better?  Who are you grateful for, and can we talk to them so that we can tell others how awesome they are?

Spa Girls Road Trip to King Spa, Dallas.

To celebrate making it through a semester of Nursing School we took the team from I.M. Spa to Dallas to explore Raw Food Restaurants and spend some time at King Spa, a Korean Jimjilbang.  Seriously though, the only way to get Jessica Crass to relax is to extract her from her environment and stick her in a spa where there is no other choice.  Some of us are just driven.

It costs $30 to get into King Spa and you can stay for 24 hours.  Any services cost extra.  At the reception they gave us some towels, uniforms, and a locker key.  We took off our shoes and entered the locker room.

We locked up all of our belongings (and yes I mean all of them), showered, and those who wanted to steam room, hot tub, and cool plunge stayed in the shower areas.  Everybody else put on their T-shirt and shorts uniform and headed out to the 9 dry sauna rooms in the co-ed area.

In the shower area is where they do the full body scrubs, and we do mean full body.  I thought I was going to brave up and do one, but after everything I learned about my microbiome and resident bacteria in my skin and how much they protect me from other pathogenic bacteria I decided to keep my microbiome intact.  The women who work in the full body scrub area come to work in a bra and panties.  And while this might seem off putting to us Westerners, the comfort that they have in their bodies makes the locker room nudity a nonissue.  It helps, if you are not comfortable with locker room nudity, that there are all body types in the shower areas.  Every body is different and every body is perfect, just the way it is.  It’s just a body.

I don’t think the girls thought we could possibly spend 9 hours lounging at the spa, but that is exactly what we did and it was lovely.  Of course I ended up taking a Pathophysiology class this summer so I spent half of my time at the spa studying and taking an online quiz.  And I’m so grateful to Jessica for driving down there so I could study in the car.

Yes.  I know. I’m a downer on road trip.  I’m a very focused person.

Since we had all gotten ‘foot massages’ earlier in the day at Shuang Feng in Frisco, none of the girls got services at King Spa, but they do offer amazing foot massages (not the full body ‘foot massages’ you get at some Chinese massage places), full body scrubs that people rave about, acupressure massage, and vaginal steams (for the health of your lady parts).

I love that it’s a family oriented health spa and whole families come in together and will lounge together.  Women brush their teeth and scrub their own bodies from head to toe in the showers.  It’s a very comfortable and relaxed environment for families.  There is even a Korean restaurant inside the spa.

Oh, and I almost forgot.  King Spa just opened up a Water Park that is attached to the spa.  It has a swim up bar (where Katie and Julie felt right at home), slides, and waterfalls with access to the outdoors as well.

Jessica and I made a point of doing the alternating hot tub and cool pool for the health of it.  Alternating hot and cold is great for the circulatory system, the immune system, and has been used over the ages for the health benefits.  Besides, it’s a shocking good time!

Lots of our clients said that they would like to caravan out with us next time we survive a semester.  You are welcome to join us!

We were thinking Colorado, but Kansas City, Tulsa, Oklahoma City, and New Mexico are options too.  Any suggestions?

The Dread Urinary Tract Infection

I paused before writing this post as I considered whether it was TMI and erred on the side of ‘we’re all in this boat together.’  If you are a woman chances are that you have had to deal with Urinary Tract Infection.  50% of women get them.

It’s one of those things that is sooo uncomfortable that it’s easy to go running to the doctor for an antibiotic to get rid of the pain, oh, and get rid of that blood in my urine too please, pronto.  The problem is, if you take the antibiotics to clear up the Urinary Tract Infection the antibiotics will wipe out all the good bacteria in your body too, and then you’re stuck dealing with another one of those aggravating things most women have had to deal with–yeast infections.  So you escape one painful horrible problem by taking the antibiotic and you have effectively replaced one horrible problem for another horrible problem, all while smiling at friends and coworkers and the unsuspecting general public.

But if you’ve had more than a couple of them, then you can certainly tell when they are coming and start treating them right away.  I have never had to go to the doctor for a UTI, not to say that you shouldn’t go to the doctor if you need to–I prefer to handle things myself if I can.    “Conventional” methods tend to leave me with more problems to fix and I have always been able to take care of UTIs myself.  The girls at the spa helped me compile a ‘go to’ list for everything you can do when you start noticing that you have the tell tale signs of the dread infection:

  • urgency to pee even though not much of anything coming out
  • irritation in the urethra, especially when pee-ing
  • general discomfort in your lower abdomen
  • burning sensation
  • start to get worried if you are having fever and chills or if you have flank pain (time to go to the doctor for sure)

What can cause UTI?  UTI is a bacterial infection in the urethra that can spread to the bladder and then up to the kidneys where it can inflict serious damage.  As women, with short, little, somewhat exposed urethras there are some things that we do that give the wrong bacteria access to our insides:

  • Sex-all kinds of bacteria meshing together
  • Too much time in the hot tub-soften and swells tissue
  • wiping from back to front-brings E. Coli bacteria to the front
  • using a wash cloth to clean the area-roughs up the tissue making it easier for bacteria to ascend
  • women have a shorter urethra than men, 4cm in women compare to 20cm in men. This is why we are more susceptible.
  • some women simply have anatomically susceptible urethras.

It’s possible that you might have a resident population of bacteria that normally gets along just fine, but given ideal opportunities, takes advantage and overgrows repeatedly–kind of a dormant gang that has to be put in its place by your good bacteria on a regular basis.  Cops and robbers of planet Urethra!

What to do:

  • Drink water.  Lots.
  • Homeopathics
  • Uva Ursi (tea, tincture, or capsules)
  • “Just Cranberry “Juice (doesn’t have sugar which feeds bacteria)
  • Yarrow tincture
  • Cranberry (capsules)
  • Always pee after sex
  • don’t use a washcloth to cleanse

First thing you should do is stay hydrated.  Drink huge glasses of water.  Getting through the discomfort of a UTI is much easier with a full bladder and a steady stream of fresh urine.  If you have to have an urgent need to pee a lot it’s tons easier to do with a stream instead of a trickle.

My go to, first thing I used to tell people who asked was the Homeopathic Boiron Cantharis pills.  They can make life bearable while you are working on cleaning out your insides.  But one of the girls at the spa turned me on to Uva Ursi, something I bathed in after home birthing my babies (Web MD says not to use it with children or pregnant woment).  She has pills of Uva Ursi that she swallows and marvels at my ability to drink it as a tea.  I guess I’m pretty hard core.  I’d just as soon get rid of it than worry about what it tastes like.  “Just Cranberry” is super bitter too, but I just chug it straight down.  I’m interested in feeling better.  Tastes are temporary.

My nursing pathophysiology book even talks about cranberry juice as a remedy for UTI.  It works because the substances in the cranberry make the surfaces of the urinary tract slippery so that the bacteria cannot adhere and are washed out with the urine.

10% of women are asymptomatic and don’t feel a thing when they have a UTI.  UTIs can spread all the way to the kidneys if left untreated and become a serious problem.  Always check with the doctor when in doubt.

It helps to know that you’re not alone and there are plenty of options that can work that don’t involve medication, especially if it is a recurrent thing for you.

2 Things to Prevent or Treat Type 2 Diabetes

It’s 11 o’clock at night.  Yes, I’m studying again.  2 weeks left in this semester of Pathophysiology and we’re studying how to prevent or treat Type 2 Diabetes.

My pathophysiology bible says “25.8 million people in the U.S. have been diagnosed with Diabetes, another estimated 7 million are undiagnosed,” and “diabetes costs us $174 billion a year.”  To put that in a little better perspective it helps to know that there are 313 million people in the U.S., so roughly 1/3 have diabetes.

Holy canoli!  That is amazing.

Later in the book it states that it’s best to “prevent and treat Type 2 Diabetes with dietary measures and exercise.  Resulting weight loss causes an improved glucose tolerance.”

I wonder what it would be like to be Type 2 Diabetic and go to the doctor.  Do they prescribe diets and exercise?  Is there a place patients go several times a week, the way you would go to the physical therapist, to learn how to change your food habits?  Maybe there is a live-in retreat where you can go for immersion training to develop a healthier lifestyle until you have enough knowledge and practice to be on your own.  Maybe there is a home health nurse or dietician who goes food shopping with you to help you learn how to make healthier meal plans.

Surely that is something that could be prescribed.  Surely insurance would pay for that.  Or maybe that is not included in the $176 billion cost.

Sheesh!  I would totally love being a nurse in that kind of setting.
